Pumpkin Streusel Bread Recipe

pumpkin streusel loaf

There’s something about the first loaf of pumpkin bread that makes it feel like fall has officially arrived. The second September rolls around, I’m ready for pumpkin, warm spices, cozy dinners, and basically anything that gives me an excuse to turn the oven back on. This pumpkin bread is soft, moist, perfectly spiced, and exactly the kind of recipe I want sitting on my counter with a cup of coffee nearby.

And because regular pumpkin bread apparently wasn’t enough for me, I added a buttery brown sugar streusel topping. It gives the loaf that little something extra—a sweet, crumbly top against the super-soft pumpkin bread underneath. It’s simple enough for an everyday fall bake but pretty enough to bring to brunch, give to a friend, or serve around the holidays. Although, fair warning, cutting off “just one more little piece” every time you walk through the kitchen is basically inevitable.

What Makes Pumpkin Bread So Moist?

Pumpkin bread is a type of quick bread, meaning it gets its rise from baking soda or baking powder instead of yeast. Despite the name, it’s actually much closer to cake than traditional bread! Pumpkin purée naturally contains a lot of moisture, which is one of the reasons pumpkin bread stays so soft and tender even a day or two after baking.

Pumpkin also has a fairly mild flavor on its own. A lot of what we associate with “pumpkin flavor” actually comes from the warm spices paired with it—usually cinnamon, ginger, nutmeg, cloves, and allspice. That’s where pumpkin pie spice comes in. Add brown sugar, butter, or a crumbly streusel topping, and you get that cozy fall flavor we all immediately associate with pumpkin season.

Instructions

Prepare the Batter

  1. Preheat your oven to 350°F. Grease two 8×4-inch loaf pans (or four mini loaf pans).
  2. In a large bowl, whisk together the pumpkin puree, oil, eggs, sugar, and vanilla until smooth.
  3. In a separate bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.

  2. Melt the butter and mix in until coarse crumbs form.

Bake

  1. Divide the batter evenly between the prepared loaf pans.
  2. Sprinkle the streusel evenly over each loaf.
  3. Bake for 55–65 minutes for full-size loaves, or 30–40 minutes for mini loaves, until a toothpick inserted into the center comes out clean.
  4. Let the bread cool in the pans for about 15 minutes before transferring to a wire rack.

Tips for Success

  • Don’t overmix the batter or the bread can become dense.
  • Use pure pumpkin puree—not pumpkin pie filling.
  • Tent the loaves loosely with foil if the streusel begins browning too quickly.
  • This bread tastes even better the next day as the spices continue to develop.

Storage

Store tightly wrapped at room temperature for up to 4 days.

Refrigerate for up to one week or freeze for up to 3 months. Wrap individual slices for an easy grab-and-go breakfast or snack.

A Little Note from My Kitchen

Pumpkin bread has a way of making a house feel like home.

It’s the recipe I turn to when the weather starts to cool, when friends are coming over for coffee, or when I simply want the kitchen to smell like cinnamon and comfort.

There’s something special about slicing into a warm loaf, watching the streusel crumble just a little, and sharing it with the people you love.

I hope this recipe becomes part of your fall traditions, too.

Happy baking. 🤍
