  1. Preheat oven to 350°F. Line a 9×13-inch pan with parchment paper.
  2. Whisk together the flour, cocoa powder, and salt.
  3. In a separate bowl, whisk together the melted butter and brown sugar. Add the eggs, egg yolks, honey, and vanilla and whisk until smooth.
  4. Stir the dry ingredients into the wet ingredients until just combined.
  5. Spread the batter evenly into the prepared pan.
  6. Bake for 16–18 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the brownies to cool completely.
  8. Place the chocolate chips in a bowl. Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate. Whisk until smooth and glossy.
  9. Spread the ganache over the cooled brownies. Top with sprinkles if desired and allow the ganache to set before slicing.
